I have always enjoyed wine, but I can honestly say my appreciation reached a whole new level after attending an in-home wine tasting by Paul. His passion for wine is infectious, and his knowledge vast. Paul was able to make the complexities of wine understandable to us. And did I mention that he is entertaining as well? Everyone enjoyed the event and still talk about it!

I have already booked Paul for another wine tasting evening – this time as a fundraiser for my favorite charity. The hardest part will be picking the theme for the evening!

Paul arranged tasting sessions at special wineries and advised us on purchases of wine for cellaring and pairings. He also accompanied us to the Niagara wine region. The visits to wineries were all the more enjoyable and enlightening due to his knowledge, experience and expertise at tastings which allowed us, through him, to converse at a different level with the winery staff. Purchases of wine were made with more confidence having Paul as an advisor.

My wife and I were invited to attend a wine tasting at a friend’s, led by Paul Hines. We enjoyed it so much, we had the pleasure of hosting one at our house a few months later. It’s not hard to have fun while drinking a variety of delicious wines, but it is more challenging to learn something. Paul has the rare ability to bring unbridled  enthusiasm and a wealth of knowledge to the table, and we all left with a little more information after a whole lot of laughs. Highly recommended!

I’ve travelled extensively with Paul to wine regions in Australia, California and Europe. His breadth of knowledge and enthusiasm for wine has led to access to the facilities of some of the best known producers in the world…Paul’s palate, and his knowledge of wine heritage, regions and production never fail to forge a path directly to the vintners, the inside stories on their vintages, and most importantly, access to their most prized bottles.

My wife, Susan and I travelled to Italy with Paul. He carefully planned our itinerary to sample some of the best that Italy offered…We visited many of the local wineries, met the vintners, and enjoyed wonderful samplings with commentary. Paul was able to converse with the vintners in a sophisticated and knowledgable way, so that we gleaned much more information about the varietals and what made their wine special.

We had Paul over to take us through our wine tasting. Paul’s wine knowledge, humour, and energy made for a very enjoyable evening. We’d highly recommend him.
